Bored of Bannock? Bush Pancakes rule....

As bushcraft subjects go, what to eat is probably just behind ‘shelter choice and setup’ and just in front of ‘which knife is best’ discussions. Having eaten my fair share of pre-packaged food there is nothing quite like the taste of freshly made food and as breakfast is arguably the most important meal of the day, this classic recipe kicks your day off nicely.

Scotch pancakes are easy to make and a batch this size should make around twelve pancakes. Make them over the fire or at home.

Ingredients:
4 ounces of self raising flour
Quarter of a teaspoon of bicarbonate of soda
2 ounces of castor sugar 
Two eggs 
Quarter of a pint of milk

Preparation:
Mix up the flour, sugar and baking powder in a large bag before you go. I like the double Ziplock bags as leaks are less likely when you add the liquids.




Cooking:Add the eggs and milk and mix in a bowl or add to the bag and give it a squeeze and shake the bag to mix it up. I then pour the mix from the bag into a recycled ketchup bottle and shake it a lot to help remove lumps.

Wipe a small amount of oil around the pan just to stop them sticking
You don’t want a really hot pan, so avoid cooking over an open flame on the fire or keep the flame down over gas.
I like to use a cast iron pan as the heat stays in the pan longer and allows the pancake to brown but not burn.
  
Pour in the mixture and as it cooks wait for all the bubbles to stop before flipping the pancake.

Add your choice of topping for a tasty start to the day.
